Toasted Parmesan Canapes

Makes 20 canapes

Note: This recipe, adapted from "Ladies' Home Journal Cookbook" (Doubleday, 1963), uses Melba toast: small circles of thinly sliced sandwich bread, baked at 275 degrees until dry and pale gold.

3/4 cup minced onion

1/2 cup mayonnaise

1/3 cup Parmesan cheese, plus extra for sprinkling

20 Melba toast rounds

Paprika, for sprinkling

1. Mix the onion, mayonnaise and Parmesan. Spread on toast pieces. Sprinkle with extra cheese and paprika.

2. When ready to serve, broil 3 inches from heat for 2-3 minutes, or until golden brown.
