Strawberry Beer Sorbet
Note: A pale ale with notes of citrus is the best choice for this. The alcohol does not cook off, so this is an adults-only dish.
4 cups fresh strawberries, hulled and chopped
1 cup sugar
2 cups pale ale
1. In a saucepan over medium-high heat, add strawberries and sugar. Using a potato masher or mallet, smash and stir the strawberries until well-macerated and combined. Bring to a boil, stirring and mashing until berries have broken down, about 10 minutes.
2. Remove from heat; let cool. Stir in beer. Chill in the refrigerator until completely cold, about 2 hours.
3. Transfer to an ice cream maker, then churn according to manufacturer's instructions. Keep sorbet in freezer until ready to serve.
