Apricot Bran Bread
Makes 1 loaf
1 cup finely cut dried apricots
¾ cup plus 1 tablespoon sugar, divided
1½ cups All-Bran cereal
1 cup milk
1/3 cup vegetable oil
1½ cups sifted flour
3 teaspoons baking powder
1 teaspoon salt
1 teaspoon vanilla
1. Preheat oven to 350 degrees. Cover apricots with boiling water. Let stand 10 minutes. Drain and combine with ¾ cup sugar. Set aside.
2. Combine cereal and milk. Let stand 2 minutes or until milk is absorbed. Add eggs and oil. Beat well.
3. Add flour, baking powder and salt. Stir until combined. Fold in apricots and vanilla.
4. Pour into greased and floured 9-inch by 5-inch loaf pan. Sprinkle with one tablespoon sugar. Bake for one hour or until toothpick inserted in center comes out clean.
