Savory Blue Cheese Shortbread
Makes 35-40 crackers
1 stick unsalted butter, room temperature
8 ounces blue cheese, room temperature
11/2 cups flour
1/4 teaspoon salt
1/2 cup finely chopped walnuts or pecans
1. In the bowl of a food processor or electric mixer, cream together the butter and blue cheese until smooth. Add flour and salt and mix until well-combined. Add nuts and combine until mixture comes together in a ball. If it's too crumbly, add water a teaspoon at a time.
2. Spread a piece of plastic wrap on the counter and dump the dough onto it. Shape the dough into a 12-inch log. Wrap tightly and refrigerate for 3 hours or up to 3 days.
3. When ready to bake, preheat oven to 350 degrees. Slice the chilled log into thin rounds and place on a baking sheet. Bake 25-30 minutes, or until lightly browned. Serve at room temperature.
