Chocolate Taffy

Makes about 2½ cups

3 cups finely chopped, high-quality dark chocolate

3/4 cup corn syrup

1 teaspoon vanilla

1/2 teaspoon salt

1. Using a double boiler or stainless steel bowl set over, but not touching, barely simmering water, melt the chocolate. Stir in the corn syrup, vanilla and salt. Remove from heat and cool to room temperature, stirring occasionally. The chocolate should come together with the consistency of pie dough and become more flexible as you work with it.

2. Place the mixture on a work surface covered with parchment paper and roll it into a 1/4-inch thick disc. Form it into 6-inch logs or the shape of your choice. (If it's too soft, chill it for 20 minutes.) Serve at room temperature.
