Serves 4 to 6
Note: This ceviche recipe hails from Drake's Brewing in San Leandro.
1/2 cup Drake's Brewing Hopocalypse or a similar double IPA
1 cup freshly squeezed lime juice
2 garlic cloves, minced
2 pounds white fish, such as snapper, bass or cod, cut in 1/2-inch cubes
2 avocados, peeled, pitted and diced
1 small red onion, diced and rinsed
1 medium habanero, ribs removed, minced
1/2 cup cilantro leaves, chopped
1 tablespoon ground coriander
1/2 cup blood orange segments
Tortilla chips, for serving
1. Whisk together the IPA, lime, garlic and salt to taste. Put the fish in a shallow dish, pour in marinade and let marinate for 2 hours.
2. Fold the avocado, onion, habanero, cilantro and coriander into the fish. Mix gently. Adjust seasoning. Garnish with orange segments and serve with chips.
