Fake Bake Tandoori Chicken
Note: Contrary to popular opinion, tandoori chicken's signature hue comes from food coloring, not chilies.
3/4 cup plain yogurt
1 tablespoon fresh ginger, minced
2 cloves garlic, minced
1/2 teaspoon cumin
1 teaspoon dried coriander
1/2 teaspoon garam masala
Pinch or more red chile powder, optional
Pinch red food coloring, optional
Salt, pepper to taste
1 pound chicken breasts or thighs, in 1-inch cubes
1. Mix the first 7 ingredients. Add chicken and marinate for at least 2 hours or overnight (in a zip-top plastic bag for easy cleanup).
2. Preheat oven to 350 degrees. Line a baking sheet with foil. Place chicken pieces on the prepared baking sheet; bake 30 to 35 minutes. If you prefer the edges slightly charred, broil 5 to 10 minutes more. Serve with channa dhal and rice. Leftovers are great served in wraps the next day.
