Lemon Lime Smoothie
Makes 2 16-ounce servings
Note: To make coconut ice, freeze pure coconut water in ice cube trays until solid. Sweeten this tart, citrusy smoothie to taste. Morris uses 15 drops of Stevia per blender and adds 1 teaspoon of wheatgrass powder for a superfood boost.
3 cups (packed) chopped baby bok choy
2 1/2 cups coconut ice (see note)
1/2 teaspoon fresh lemon zest
1/4 cup freshly squeezed lemon juice
1/4 cup freshly squeezed lime juice
1 cup coconut water
Sweetener, to taste
Blend all the ingredients together until frosty and smooth. Taste, and sweeten as desired.
