Samovar Tea Ochazuke (Tea Soup)

Serves 2 to 4

2 cups water

2 tablespoons robust green tea, such as ryokucha or hojicha

1 cup cooked brown rice or sushi rice

1/2 cup steamed carrots, cut into bite-sized pieces

1/2 cup steamed broccoli, cut into bite-sized florets

1 to 2 ounces smoked salmon, cut into bite-sized pieces

1 teaspoon sesame oil

1 teaspoon tamari soy sauce

Garnish: toasted nori seaweed, sesame seeds and chopped scallions

1. Boil water, pour over tea and let steep for 3 minutes.

2. Place rice, carrots, broccoli, smoked salmon, sesame oil and soy sauce in a large soup bowl or individual bowls. Pour tea over the ingredients in the bowl(s). Garnish with seaweed, sesame seeds and scallions.
