Two on a Raft

Inspired by "Life of Pi"

Serves 2

Note: This recipe makes more than enough aioli and curry mayonnaise. Refrigerate any leftovers.

1 ounce fresh mahi-mahi

2 large prawns

Curry mayonnaise:

1 teaspoon curry powder

1/2 cup mayonnaise

Lemon aioli:

1/2 minced garlic clove

1/2 teaspoon finely grated lemon zest

Juice of 1/2 a lemon

1/2 cup mayonnaise

To assemble:

1 avocado

Handful baby arugula

Lemon juice

Marinated whole beets (from a jar or the deli)

Crispy onions (canned are fine)

1. Slice the mahi-mahi into 1/8-inch thick slices.

2. Drop prawns into boiling salted water; cook until just opaque, no more than 2 minutes. Drain and chill.

3. Mix the curry powder with 1/2 cup mayonnaise.

4. For the lemon aioli, mix the garlic and lemon zest and juice into 1/2 cup mayonnaise.

5. To plate: Cut avocado in half; remove pit. Place a small bed of arugula on each plate. Set an avocado half -- the raft -- on top of each. Spritz with lemon juice. Spread 2 tablespoons aioli on the plate around the arugula, and 2 tablespoons curry mayonnaise in the avocado wells.

6. Add the mahi crudo (which represents the boy) and tiger prawn to the raft. With a melon baller make a ball from the beet. Place it at the bow of the avocado boat.

7. Arrange onions at the bow and stern to approximate a wake (the stern) and breaking waves (the bow). Sprinkle with kosher salt and cracked pepper, and serve.
